A Little Bitter, A Lot Sweet — And a New Favorite
It’s been a little while since I’ve sat down to write here… and honestly, I’ve missed it. There’s something about putting words to the same creativity that happens in my kitchen that just feels right. So, consider this a little comeback—both to writing and to saying yes to new ideas.
Recently, I was asked to create a flavor that wasn’t on my menu: espresso buttercream.
Now, if you know me, you know I’m not a coffee girl. The strong, bitter taste has never really been my thing. But I am a “say yes to the challenge” kind of baker… so into the kitchen I went.
And here’s the surprising part—I loved it.
Not in a bold, black coffee kind of way… but in a rich, smooth, almost indulgent way. Paired with a soft vanilla cake, the espresso buttercream didn’t overpower—it elevated. It added depth. That first bite had this perfect balance: sweet, buttery, and then just enough of that espresso richness to make you pause and go back for another.
It actually reminded me of something I do enjoy—an occasional espresso martini with my best friend. That same smooth, slightly bold flavor… but softened, sweetened, and made into something you want to linger over.
So naturally, I leaned into that inspiration when decorating this cake. Vintage piping (because let’s be honest, I’m always going to love a classic), warm espresso tones, and those little finishing touches that make it feel just a bit elevated—like dessert meets cocktail hour.
And just like that, a new flavor was born.
This is one of the things I love most about what I do. When someone asks for something that isn’t already on my list, it doesn’t feel like extra work—it feels like an invitation. An opportunity to experiment, to taste, to adjust, and to bring a brand-new idea to life. To take a flavor profile from someone’s imagination and turn it into something you can actually experience.
So I’m officially adding espresso buttercream to the Sara’s Sweeties menu.
And maybe this is your reminder (and mine) that sometimes the things we don’t expect to like… end up being the ones we enjoy the most.
